When I play as the Greeks and get my Hydra’s I am unstoppable.
When I play as the Egyptians I suck. My armies always get overrun and I don’t seem to have very powerful units.
Any tips?
A defensive priest + slinger combo until you have the resources for Migdol stronghold units works for me.

Elephants + priests + chariots + slingers + catapults, you need only these five things to do any assault with Egyptians technically, and you can defeat titans with elephants + priests.
Maybe some axemen in the early stage, to deal with hero units. Really not suggest to do early assault before Age III, unless you are targeting villagers.
Don’t bother to use spearmen (unless you have poisoned spear ugrade) and myth units. Spend your favors on tech upgrade and God Powers.
Gather more gold to build towers and strongholds to support your defence, build wall to slow down enemy, so you have time to spawn troops when defending.
