Apologies for the length and number of images (on the reddit thread), but I wanted to be as thorough as possible! This is almost certainly not exhaustive, as I only checked the main in-game structures and no campaign-only buildings.
Noticed a few glaring environment map (EM for brevity) omissions when playing, so I hopped into the editor and checked every single building from normal gameplay.
Some of these are very minor, but a fair few are very, very noticeable during standard play. There also seems to be a definite faction bias. The Greeks and Norse have relatively few issues, the Egyptians have some, but the Atlanteans have a huge number.
Used the snow EM’s for the examples due to visibility, but these issues carry across all the different environment changes (snow, sand, marsh mold, & ash).
Greeks:
- The steps on the Greek Temples do not have an EM. This carries across all 4 ages. (Image 2)
Egyptians:

NONE of the Egyptian Major God Statues (MGS for brevity) have EM’s in any circumstance. This is especially glaring on the Town Center, Temple, and Citadel Center, which have full EM’s otherwise. (Images 1, 3, 4, & 5)

Egyptian Stone Wall Hubs do not have an EM. Wall sections and gates are unaffected, as are the wooden, fortified, and citadel walls. (Image 6)

The canvas coverings on Classical Age Egyptian Town Centers and Village Centers do not have an EM. (Images 3 & 7)

Obelisks have no EM. (Image 8)
Norse:

Freyr’s MGS has no EM, but his statue base does. This carries across all circumstances. (Images 1, 9, 10, & 11)

Dwarven Armories have inconsistent coverage on the stone base depending on age. For example: The Archaic and Mythic models have a little snow. The Classical model is fully covered in snow including the fire. The Heroic model has no snow at all. (Image 12)
Atlantean:

Kronos’s MGS has an EM but not on the base. This carries over to all cir########### (Images 1, 13, 14)

Gaia’s MGS has strange inconsistent “cutouts” on the base. This carries over to all circumstances. Unsure if this is intended or not. (Images 1, 13, 14. Highlighted in Image 15)

Atlantean Town Centers have an array of issues:

The Archaic Town Center is missing environmental maps on the small building, granary, and fences. (Image 13)

Heroic Town Centers are missing environmental maps on the granary and walls. These carry over to Heroic Fortified Town Centers, which are also missing an EM on the small building. (Images 13 & 16)

Mythic Town Centers are missing an EM on the fences, but Fortified Mythic Town Centers are missing an EM completely except for the MGS. (Images 13 & 16)

Atlantean Classical and Heroic Temples are missing EM’s. (Image 14)

Classical and Heroic Economic Guilds are missing EM’s on the windmills. Mythic Economic Guilds are missing an EM entirely. (Image 17)

Mythic Sky Passages do not have an EM. Archaic, Classical, and Heroic Sky Passages also use the same model, which does at least have an EM. (Image 18)

Mirror Towers do not have an EM. (Image 19)

Iron Wall Sections have an EM but it does not apply anything to the top of the wall, in contrast to the Gates and Hubs. Unsure if intended. (Image 20)

While all of the Atlantean Wonders have EM’s, they are implemented very strangely. Kronos’ Wonder has an EM covering the lava, which in this example means there’s snow on top of it. Gaia’s Wonder has an EM on the exterior aqueducts but not on the Statue and Fountain that is the centerpiece. Oranos’ wonder has an EM that covers the top of the dome, which is fine in snow, but looks bizarre with the sand, ash, and mold maps. (Image 21)
Other:
The Ashy Environment Map is currently only used on Burnt Greek Roads, which is a shame. Would work well on Erebus terrains in particular! (Image 22)
