We could try to suggest to the devs that the Khitans share the Mongols’ castle visual until a new one is designed for the Khitans or better yet a new one is designed for the Mongols.
The Mongols’ castle visual has the style of northern China and Mongolian steppes, which is accurate for the Mongols and also for the Khitans. For the Mongols, they could get a new castle visual that looks like the Cumans’ Wonder, consisting of 2 or 3 yurts and a fort (but a fine Eastern Asian fort without ruins). Being decorated with yurts can make it more nomadic and more in line with their Wonder, a great yurt.
The Khitans’ current castle visual could be kept in the Scenario Editor with a name of “Tangut Castle”, or just be remained in data. Then, wait for the release of the true Tangut civ.

I think it’s missing Celts – based on Eileen Donan castle.
I think the Vietnamese one is probably at least partly based on something else. The pavilion above the gate doesn’t look like Hue to me, it looks more like the Imperial Citadel of Thang Long – but not quite the same. Maybe there is another building in a similar style?

I’m not a big fan of them keeping all pre-existing castles, especially since a lot of them are based on stuff built by civs other than the ones they were given to.
Beyond Mali and Teutons is there any other really weird one?
Every one of them seem fairly strongly tied to the civs they were given to
Middle Eastern (now Sarracens) one is most likely based on a Italian castle
East European (now Slavs) castle is based on one built by the Teutonic order, and it was built on Poland, not on Russia
And Meso (now Aztec) castle is based on a Mayan temple in Palenque, not on something built by Aztecs

I thought that the Aztec castle was based on something in the Nahua region, I guess I got it wrong

Are you sure it’s based on Saladin’s citadel? The basic design looks a lot more like Castel Nuovo (the Italian one I showed) and it’s also missing the mosque, though the latter could be for simplicity’s sake.
Even the photo used in the comparison is of Castel Nuovo and not the citadel.
Oh, that’s the campaign icon I use in my costum Valdemar scenario (and will use for some related campaigns when I eventually get time to finish them)
