Most interesting rework imo is into an SC2 style spell caster who is probably slow to train and is a support unit (maybe having an “incendiary tactics” ability to boost nearby friendly units vs buildings, and a throw grenade about with AoE and a bonus vs infantry, and probably one other ability either to boost other units or do some limited battlefield construction). Attack stats would be around that of a Musketeer, while using 2-3 pop, and training 1 by 1. The ability to deal some splash damage and support other nearby units would cause them to work best in small numbers.
Edit: as is, Grenadiers do have a place, just not a very big one.

I’m not sure whether or not it’s possible, but it’d at least be interesting as a hypothetical.
Having said that, there are highly valid balance questions with any change made to them. Making a Soldado style unit gives a powerful Musketeer to civs like the Dutch, which could cause issues. Making it a spell caster adds the balance issue of buffing all non-Ottoman Euro civs to varying degrees, while doing nothing for the Native Civs, or Japan (India and China have French Con so they’re fine).
