Do we know if we will be able to save games against the AI? There wasn’t an option to do this during the beta, but I guess it was because you were playing a custom multiplayer game just against the AI.

Yes.
There is no reason or indication that there will be no saving feature for single-player mode(s).
Beta and stress test were MP-only builds and some lacking features were related to this fact.
