After researching Spice Roads from the House of Wisdom, the secondary resource from trade gets stuck to wood. It’s not possible to toggle to food from the Market.
This only happens after researching Spice Roads. Using Grand Bazaar and toggling between Food/Wood works just fine.

I saw the same issue. I could reproduce it easily.
After researching Spice Road, traders will always return wood as secondary resource. Even if the toggle in the market is displaying Food.
I tested to see if it’s only a UI bug. I stopped all my villagers from working. Only my total Wood and Gold would increase, when trading.
Unfortunately, with the recent season 11 patch, this bug still exists!
I think the “Fixed an issue where Trade Caravans used the incorrect description label.” change of the last patch is related to this very issue. However: it does not fix the most relevant part of the problem. The recent change only solves that the button in the Abbasid market is not stuck at wood any more, but can toggle between food and wood. But this is just a cosmetic change. However, what remains unfixed is that the Abbasid traders still (always) drop off wood at the market, even if the button currently displays food. In other words: what the button displays, and what the traders drop off, is not related to each other.
Again, I also want to confirm the observation of the original poster: if you only have Grand Bazaar researched, then everything works fine. The bug only occurs if you have researched both, Grand Bazaar and Spice Roads. This still applies after the season 11 patch.

Half a year later, and this bug still exists with the recent patch.
How to reproduce this bug:
Pick Abbasid
Research: Trade Wing + Grand Bazaar + Spice Roads (please be aware that Spice Roads is essential, otherwise the bug does not occur)
Select market and set “Toggle Trade Resource Type” to food
Build a Trade Caravan / trader and let it trade between markets
Bug: Even though “Toggle Trade Resource Type” button of market is set to food, the Trade Caravan still drops off wood as secondary resource. Can be seen either if you select the trader and look what it carries, or if you look at the popup of the resource type when the trader drops off at the market.
I would really appreciate if devs could have a look at this issue. I could imagine it would be an easy fix.
