My friends and I really enjoy playing Age of Empires IV. However, we have noted that it could be convenient to have more than 8 player slots. What are your thoughts on this?

Eight players slots is enough. More then that is too many players. It also seems like the more players you have the more likely the game drops someone

At the moment, we are challenged when we are 5 or 6 people who would like to play against the AI. Since there are only 8 slots available, we have to play against 2 or 3 AIs, which is not challenging. As a result, some of my friends left Age of Empires IV in favor of Age of Mythology, which I think is a shame.

Once the game has custom maps (hopefully in less than a year from now) you can make custom scenarios that would be challenging for even 6 or 7 players vs the AI
I see what you mean. Me and my brother had to fight like 5 ai opponents on hardest in aoe 3 to be challenging before we got into multiplayer
You could always split into teams and fight each other
