The first 3 minutes is less than enough for me to walk to the river to build a dock, and then 200 meat farmers, buy 100 wood enough to make an tower, which feels very extreme, but the Spanish AI does not give a chance to come up in 2 minutes to start attack .

Start making Eagle Scouts straight away, and send all your units towards orange. Then, send a few villagers to the orange town, build Monasteries, and train Monks. Use Monks to convert everything, whilst you get your economy going.
I just tried like you said. Gunboats would give you No chance they will attack the town directly
Like with lots of other achievements, save often. If you notice an incoming attack, reload an earlier save and build units that counter whatever they are attacking with.
Send villagers into their town early and build barracks and archery ranges early, and once you can afford it a castle.
Personally I wouldn’t go for monks straight away, but instead first build up a good food and wood eco and spam Pikes and Skirms from the buildings inside of oranges town.
The AI-aggressiveness seems to vary quite a bit in this map.
Try using the southernmost path (close to reds base) towards orange, instead of the direct route. That way sometimes the cannon galleons aren’t directly triggered.
