On current Turkey, roughly by time, they were: the Hittites, Greeks, Persians, Macedonians and Romans

Ottomans probably won’t be ever added to the game since such empire did not exist during the Ancient period. You can find the Turks in Age of Empires II: Definitive Edition however, and the Ottomans in Age of Empires III: Definitive Edition. I don’t know if the Turks will be featured in Age of Empires IV, but you can keep track of the game by following its Steam page here or by checking the latest news from the game’s official page.
