The objectives say that I have to to convert Afonso, but “Afonso” is a regular Champion and when he is converted nothing happens.

I’m having the exact same problem. Seems that the campaigns in AOE2 Definitive Edition are full of bugs. So often in the campaign people don’t even have proper names. One enemy was called multiplayer 8 people or something stupid. Game is in steam.
Same thing happened to me, he moved outside the walls a bit northweast outside the gates of the Ottomans I think. He’s a Conquistador or something like that. Funny thing is you can leave him there and explore the whole map without being attacked before converting him and starting the next phase of the mission.
They do that on purpose, I think they’ve done it since AoE 1 just for the lulz.
