What is a good counter to Egyptian elephant spam?

In general, you should first try to prevent your enemy to get to that point.
Aquire map control, find and raid stray villagers hunting and on remote goldmines.
Deny enemy secondary town centers. Constantly scout neutral settlements, this goes with why you want map control.
Finally if your opponent is Spamming elephants now;
If you’re behind, you’re probably down for. You should have had more aggressive strategy or map awareness.
If you’re ahead, no probroblem, elephants are very expensive and can’t be spammed.
If you’re about equal, deploy counter units:
Greeks: Prodromos. Egyptians: Spearmen and Camel Riders. Norse: Hirdmen. Atlanteans: Katapeltes or Fanatics.
As Zeus you have high favour gain. Myth units, especially Hydras (grow some heads with them) will do them in. And if you picked Athena in age II, Sarissa gives you great Hoplites that can pile deep on elephants, they also have anti-building multipliers, destroy the migdol-strongholds. If you picked Hermes, keep deploying prodromos.
Always keep raiding your enemies economy, ALL warfare is economical, so hit them where it hurts.

Only myth units can withstand elephant attacks actually. You need to expect to lose many men to fight against elephants.

If not, you need to prepare many counter units with Greeks or Atlanteans, remember to build lots of barrack, stable or castle to spam counter units.

Lots of Norse barrack units can melt down elephant quite quickly, build myth units when you gain favors in battle.

As for Egyptians, build elephants, and support with counter units or myth units.

Anti-cav are the best option, but I recommend infantry specifically. They’re very cost-effective against elephants.

Your problem is 3 soo, not the elephants. They are supposed to pretty much guarantee victory. At this stage, it is all a numbers game.

Quite simply throw archers and your beefiest HU at the problem untill the soo dies (all 3).

Then it’s just hoplite spam.

Well high resources start is not meant to be balanced anyway. Same for aoe2 and 3. It is just a fun mode for noobs to spam expensive unit, defy unit counters and stomp enemy for fun. It is something they can’t do in regular start games. It’s especially popular for those who can’t win regular games to have a taste of winning. That’s why people pick high resources start to nullify some of their skill gap in macro, because by starting high resources all players can ignore macro and spam stuff immediately, without worrying about resources allocation vill production etc, for a while

Again thats the same reason why some low level players want to start with treaty, or super large maps, to nullify some skill gaps early on, allowing them to survive longer. Some strats and units are powerful in late game, can only be countered by early attacking. This setting will deny those counters and allow them to spam powerful units without a good counter from opponent

Stupid idea but what if Elephants gave a kill reward like Fafnir.
Maybe like 50-100 Food.
Would be logical since you can also hunt elephants for food.

Turning them into a carcass would be more logical but then the map would be filled with them pretty quickly.

I’m sure that there is more science to it than that. I play aoe3 and there is a similar mode called deathmatch and there is certainly strategy to it, just different from normal play. Same with 40min treaty which functions similarly in terms of end resources
