In team games when someone is defeated, their villagers will continue to gather resources which in my opinion is quite bad because if your team mate loses and you want to farm his gold mine you have to complete with their zombie villagers. Why was that decision made in the first place?

Why I never thought of that?
I personally like it, it makes the game more realistic in a certain way. As the nation surrenders but it is still a nation and has to keep going.
