Age of Empires 3 covers the Early Modern Era, which is roughly 16th century (although many pin it to anytime from the fall of Constantinople in 1453 up to 1500) up to the mid 19th century (though that in fact reachs even further into the 1800s in a number of cases).
The medieval units you listed in the game are early modern era units as well. The Longbow was used (alongside the just-as-old Bill polearm) throughout the 1500s. Pikemen (which were a Renaissance-era - i.e Early Modern revival) were used up until the 1720s (Swedes still used them well) and even reappeared in the 19th century when the Russian Militias (Peasants) used them. Again, Crossbows also were used in the Early Modern Era as well as in medieval times so are completely valid as well - they loitered in armies and on board navy ships during the 1500s (especially by the Spanish), though these were fazed out completely by the 1600s.
The Nest of Bees were way before this (1380s).
this change is excessive; the combo of musketeers+cannons is a very common combo. The Aztecs to face the musketeers+cannons combo creates the ERK+arrow combo; The ERK have the function of fighting the musketeers and absorbing the damage of the cannons while the arrows eliminate the artillery. But since now the ERK cannot fight against the musketeers, the aztecs have to resort to jaguar or otontin. but the jaguars and otontin are very vulnerable to artillery. then a common scenario will be that of the cannons eliminating the jaguars or otontin, leaving the arrows defenseless against the musketeers (the arrow knights have good armor but cost two population; they cannot alone against the musketeers and even less if musketeers count with artillery support). The Aztec player will have to outskill his rival in order to win.
With this change the Aztecs no longer have an effective way to counter one of the most common combos. When the ideal is that all civilizations have at least one effective response against any existing strategy. you are leaving the Aztec army totally broken.
A lot of great changes in this patch, I like the maceman, oromo, and landsknecht pop reductions.

It may be so. But my prediction is that the Aztecs will not have any effective response against the musketeers + cannons combo. The problem is not ERK vs skirmshers, but now they are weak against musketeers and I don’t think that the otontin+arrow or jaguar+arrow combos can fill the gap left by the ERK. At least not in late games.

Critical mass occurs in all RTS, but the number of light infantry for that critical mass to occur would need to be higher.
It is that a dragoon type unit and a culverin type unit should not be the optimal combo against musk cannon, but a light infantry unit (with some anticav unit protecting) plus arrow knights with their range advantage.

I was testing and the papal lancer is affected by the Caballeros card, but I think I have a more interesting solution, I think the mounted grenadier should be affected by the card.
The mounted grenadier is already anti-infantry and would also be more historically correct, the problem is that it would have to have a higher multiplier against infantry, obviously this multiplier would only affect the spear attack and would only be for the mounted grenadier.
