If we are going by ethnicity, Cumans don’t belong in the game(Turks), neither do Bulgarians(Slavs) oh wait I didn’t see anyone complaining about Bulgarians or Cumans when they entered the game,.
Cumans and Bulgarians are their own ethnicities with their own distinct language and culture. Cumans are kinda extinct now, after Mongol Invasions. And Bulgarians, what makes you think they are not an ethnicity?

Bulgars is a Turkic group from North of Caucasus near Volga. A group of them migrated into Europe mixed with South Slavs and minors settled. They are the ones called Bulgarians.
They even have empire status, First Bulgarian Empire (8th - 10th century), Second Bulgarian Empire (12th - 14th century)
They were not insignificant in medieval age like the Poles and other Slavic minors.
This is true, but they subjugated (and due to being outnumbered, got assimilated into) the local slavic population, and by the time of the campaign in AoE2, Bulgarians were just a slavic nation.
The Volga Bulgars, which remained in the territory of modern day Russia would probably be a separate civ from ‘Bulgarians’ considering they even had a different faith, the current architecture of the Bulgarians civ just wouldn’t fit for a starters.
Poland was no more insignificant in medieval times than Magyars or Lithuanians. They were a potential candidate back when the game was originally being developed
Asian civilization/cultures are still very much alive from classical era to the modern without being assimilated in to other groups unlike some ingame civis.
But hey only european villages and hamlets matter.
A nation surviving to the modern era doesn’t necessarily mean the nation was significant at the time AoE2 is set.
Indeed only european civis matter since medieval is a european thing anyway.
